What You'll Need
- For the Habanero Pesto:
- ½ cup fresh basil leaves
- 2 tbsp grated Parmesan cheese
- 2 tbsp olive oil
- ½ tsp Double Dare Ya™ Habanero Hot Hug™ Seasoning Blend
- ½ tsp lemon juice
- Salt to taste
- For the Grilled Cheese:
- 2 tbsp butter, softened
- 4 slices of sourdough or rustic bread
- 2 tbsp habanero pesto
- 1 cup shredded mozzarella or Monterey Jack cheese
- ½ cup shredded sharp cheddar cheese
Instructions
- In a small food processor or blender, combine basil, Parmesan cheese, olive oil, Double Dare Ya™ Habanero Hot Hug™ Seasoning Blend, and lemon juice. Blend until smooth. Add salt to taste.
- Spread butter on the outside of each slice of bread. Spread a thin layer of habanero pesto on the other side of each slice of bread. Sprinkle half of the cheeses on top of the pesto side of one slice of bread. Top with the second slice of bread. Repeat with remaining cheese and bread slices.
- Heat a skillet or griddle over medium-low heat. Cook each sandwich for 3-4 minutes per side, pressing down lightly with a spatula, until golden brown and the cheese is fully melted.
- Slice in half and serve warm. Pair with tomato soup or a side salad.
